  • 1 lb ground beef Use lean ground beef for a healthier version.
  • 1 cup onion, chopped Yellow onion works best.
  • 2 cloves garlic, minced Fresh garlic enhances flavor.
  • 4 cups beef broth Homemade or store-bought.
  • 1 cup heavy cream For a lighter version, use half-and-half.
  • 1 cup grated Parmesan cheese Freshly grated has the best flavor.
  • 1 tsp Italian seasoning Can substitute with herbs de Provence.
  • to taste Salt and pepper Adjust according to preference.
  • 2 cups spinach (optional) Add for extra nutrition.

Method
 

Sauté the Aromatics
  1. In a large pot, over medium heat, add a splash of olive oil (or your preferred cooking oil). Once hot, toss in the chopped onion and minced garlic. Sauté until the onion becomes translucent and the garlic is fragrant, about 3-4 minutes.
Brown the Beef
  1. Add the ground beef to the pot, using a wooden spoon to break it into smaller pieces. Cook until fully browned, about 6-8 minutes. Season with salt, pepper, and Italian seasoning while cooking.
Add Broth and Simmer
  1. Pour in the beef broth. Bring the mixture to a gentle simmer, allowing the flavors to meld together. For extra flavor, you can also let it simmer under low heat for 10-15 minutes.
Stir in Cream and Cheese
  1. Reduce the heat to low and add the heavy cream and grated Parmesan cheese. Stir well until the cheese is thoroughly melted and incorporated into the soup.
Incorporate Spinach
  1. If you choose to include spinach, toss it in during the last couple of minutes of cooking. This keeps it fresh and vibrant while adding beautiful color to your dish.
Serve and Enjoy
  1. Once everything is mixed and heated, taste the soup and adjust seasoning if necessary. Ladle into bowls and enjoy this creamy goodness!

Notes

For substitutions, ground chicken or turkey can replace the beef. If storing, keep in an airtight container and consume within 3-4 days. You can freeze it for longer storage. When reheating, add a splash of broth or water if needed.
