  • 1 lb ground beef (make sure it’s halal)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 2 cups beef broth (halal)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • to taste salt and pepper

Method
 

Cooking Steps
  1. In a large pot, heat over medium-high heat and add the ground beef. Brown the meat, breaking it up with a wooden spoon for about 5-7 minutes until fully cooked.
  2. Push the meat to the side and add chopped onions and garlic to the pot. Sauté them for another 2-3 minutes until they are softened and fragrant.
  3. Stir in the diced tomatoes (with juices), kidney beans, corn, beef broth, chili powder, cumin, salt, and pepper. Bring the mixture to a gentle simmer.
  4. Reduce the heat to low and let your Hearty Cowboy Soup simmer uncovered for about 30 minutes. Stir occasionally and enjoy the wonderful aroma filling your kitchen.
  5. After 30 minutes, taste the soup and adjust seasoning if needed. If you want a spicier kick, add more chili powder!
  6. Ladle the delicious soup into bowls and enjoy it with your favorite toppings, like shredded cheese, cilantro, or jalapeños.

For ingredient substitutions, use lean turkey or chicken if preferred. To enhance texture, add extra veggies like bell peppers or zucchini. Store leftovers in an airtight container for up to 4 days or freeze for 3 months. Reheat in a pot or microwave as needed.
