Wet Ingredients
  • 1 cup pumpkin puree
  • 1/2 cup coconut oil or unsalted butter, melted Can use coconut oil for a healthier option.
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar Can substitute with coconut sugar or maple syrup.
  • 1 large egg
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups whole wheat flour Spoon flour into measuring cup to avoid dense cookies.
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the pumpkin puree, melted coconut oil (or unsalted butter), brown sugar, and granulated sugar. Whisk together until smooth.
  3. Add the egg and vanilla extract to the mixture. Continue to whisk until everything is fully combined and creamy.
  4. In a separate bowl, mix the whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Whisk them together.
  5. Gradually add the dry mixture to the wet mixture, stirring gently until combined.
Baking
  1. Using a cookie scoop or tablespoon, drop dollops of the cookie dough onto a greased baking sheet, leaving space between each cookie.
  2. Bake in your preheated oven for 10 to 12 minutes, or until the edges are lightly golden.
  3. Once baked, remove cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze cookies wrapped in plastic wrap. Thaw at room temperature or microwave to enjoy fresh flavor.
