  • 1 lb healthy turkey or chicken sausage, sliced Can use any preferred healthy sausage.
  • 1 bell pepper, diced Any color bell pepper works.
  • 1 medium zucchini, sliced
  • 1 cup broccoli florets Fresh or frozen broccoli can be used.
  • 1 cup cherry tomatoes, halved
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tsp olive oil
  • Salt and pepper to taste
  • Optional: Italian seasoning or red pepper flakes For added flavor.

Method
 

Cooking Steps
  1. Heat olive oil in a large skillet over medium heat.
  2. Add the sliced sausage to the skillet and sauté for about 5-7 minutes, stirring occasionally until browned and cooked through.
  3. Toss in the diced onion and minced garlic, cooking for another 2-3 minutes until the onion becomes translucent.
  4. Add the diced bell pepper, zucchini, broccoli florets, and cherry tomatoes to the skillet, stirring everything together.
  5. Sprinkle salt, pepper, and any optional seasonings you prefer. Cover the skillet and let everything cook together for another 5-7 minutes until the veggies are tender.
  6. Once everything is cooked to your liking, give it one final stir and serve hot.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Freeze in a freezer-safe container for up to a month. Reheat on the stovetop over medium heat, adding a splash of water to avoid drying out.
