Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, combine the rolled oats, whole wheat flour, baking powder, and salt. Stir until well blended.
- In another bowl, mix melted coconut oil, honey or maple syrup, and vanilla extract until well combined.
- Slowly add the wet mixture to the dry mixture, stirring until you have a soft dough. Gently fold in the raspberries.
- Using a spoon or cookie scoop, drop dollops of the dough onto a lined baking sheet, spacing them about 2 inches apart.
Baking
- Place in the preheated oven and bake for about 10-12 minutes, or until the edges are golden and the centers are still soft.
- Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Store cookies in an airtight container for up to a week at room temperature or refrigerate to extend freshness. For long-term storage, freeze them for up to three months and reheat in the microwave for 10-15 seconds before serving.
