  • 1 Tbsp Olive Oil Used for sautéing the chicken.
  • 4 cups Packed Greens of choice (like spinach, romaine, or mixed greens) Choose fresh greens for best flavor.
  • 1/4 cup Ranch Dressing Feel free to substitute with Greek yogurt dressing.
  • to taste Salt and Pepper Seasoning for the chicken.
Optional Ingredients
  • Cherry tomatoes, chopped For additional flavor and crunch.
  • Cucumbers, chopped For additional flavor and crunch.
  • Bell peppers, chopped For additional flavor and crunch.

Method
 

Cooking the Chicken
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the bite-sized chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.
Preparing the Salad
  1. While the chicken is cooking, wash and dry your greens. In a large bowl, place the packed greens as the base of your salad.
  2. If you’re adding cherry tomatoes, cucumbers, or bell peppers, chop them up and add them to the bowl with the greens.
Combining Ingredients
  1. Once the chicken is fully cooked, allow it to cool slightly before adding it to the salad bowl.
  2. Drizzle the ranch dressing over the chicken and greens. Toss gently to combine everything evenly.
Serving
  1. Enjoy immediately for a fresh, healthy meal, or chill for later.

Notes
