Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine almond flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Stir well until combined.
- In another bowl, whisk together pumpkin puree, eggs, and honey or maple syrup until smooth.
- Gradually add the dry mixture to the wet mixture, folding gently until just combined.
- Lightly grease a mini muffin tin or line it with silicone baking cups.
Baking
- Fill each muffin cup with the batter, filling each about 3/4 full.
- Place the tray in the preheated oven and bake for 10-12 minutes, or until a toothpick inserted comes out clean.
- Allow the donut holes to cool for a few minutes in the pan, then transfer to a wire rack to cool completely.
Notes
Store in an airtight container in the refrigerator for 4-5 days or freeze for up to 3 months. Reheat in the microwave for 15-20 seconds or in the oven at 350°F for a few minutes.
