Ingredients
  

Main Ingredients
  • 1 cup pumpkin puree
  • 1 cup almond flour Can substitute with coconut flour but may need to adjust wet ingredients.
  • 2 pieces eggs
  • 1/4 cup honey or maple syrup Natural sweeteners.
Leavening and Spices
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Stir well until combined.
  3. In another bowl, whisk together pumpkin puree, eggs, and honey or maple syrup until smooth.
  4. Gradually add the dry mixture to the wet mixture, folding gently until just combined.
  5. Lightly grease a mini muffin tin or line it with silicone baking cups.
Baking
  1. Fill each muffin cup with the batter, filling each about 3/4 full.
  2. Place the tray in the preheated oven and bake for 10-12 minutes, or until a toothpick inserted comes out clean.
  3. Allow the donut holes to cool for a few minutes in the pan, then transfer to a wire rack to cool completely.

Notes

Store in an airtight container in the refrigerator for 4-5 days or freeze for up to 3 months. Reheat in the microwave for 15-20 seconds or in the oven at 350°F for a few minutes.
