  • 1 cup pure pumpkin puree
  • 1/2 cup almond butter Can substitute with any creamy nut or seed butter (Halal-compliant).
  • 1/4 cup honey or maple syrup Adds moisture and sweetness.
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips Optional, reserve some for topping.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a square baking pan (8x8 inches) with parchment paper.
  2. In a large bowl, combine the pumpkin puree and almond butter. Stir until smooth.
  3. Add the honey or maple syrup, cocoa powder, baking powder, vanilla extract, and salt to the mixture. Mix well until a thick batter forms.
  4. If using chocolate chips, gently fold them into the batter, reserving a few to sprinkle on top.
  5. Pour the batter into the prepared baking pan, spreading it evenly.
  6. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the brownies cool in the pan for about 10 minutes before lifting them out using the parchment paper. Cut into squares and serve.

Notes

Store in an airtight container in the refrigerator for up to one week or freeze for up to three months. To reheat, microwave for 10-15 seconds.
