  • 1 cup pumpkin puree Use pure pumpkin puree, not pumpkin pie filling.
  • 1/2 cup honey or maple syrup Can use agave syrup or sugar substitutes as alternatives.
  • 1/4 cup coconut oil, melted
  • 2 pieces eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper or lightly grease it.
  2. In a large mixing bowl, combine the pumpkin puree, honey or maple syrup, melted coconut oil, eggs, and vanilla extract. Whisk everything together until smooth and creamy.
  3. In another bowl, whisk together the whole wheat flour, baking powder, baking soda, pumpkin pie spice, and salt until well mixed.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently to avoid overmixing; just fold until combined to create a thick batter.
  5. Pour the batter into the prepared baking pan, spreading it evenly. Bake in the preheated oven for about 25 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow the pumpkin bars to cool in the pan for about 10 minutes, then transfer them to a wire rack. Once cooled, cut into squares, serve, and enjoy.

Notes

For added flavor, consider mixing in chocolate chips or chopped nuts. Store in an airtight container for up to one week in the refrigerator or freeze for up to three months. Reheat for best texture.
