- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper or lightly grease it.
- In a large mixing bowl, combine the pumpkin puree, honey or maple syrup, melted coconut oil, eggs, and vanilla extract. Whisk everything together until smooth and creamy.
- In another bowl, whisk together the whole wheat flour, baking powder, baking soda, pumpkin pie spice, and salt until well mixed.
- Gradually add the dry ingredients to the wet mixture, stirring gently to avoid overmixing; just fold until combined to create a thick batter.
- Pour the batter into the prepared baking pan, spreading it evenly. Bake in the preheated oven for about 25 minutes or until a toothpick inserted in the center comes out clean.
- Allow the pumpkin bars to cool in the pan for about 10 minutes, then transfer them to a wire rack. Once cooled, cut into squares, serve, and enjoy.
Notes
