Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the mashed bananas and peanut butter until smooth.
- Add the rolled oats, honey or maple syrup (if using), vanilla extract, and a pinch of salt. Stir until fully combined.
- Take tablespoon-sized portions of the dough and place them onto the lined baking sheet, ensuring space between each cookie.
Baking
- Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and let cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. For longer storage, freeze the dough portions for fresh cookies anytime.
