  • 2 pieces ripe bananas (mashed) The riper the bananas, the sweeter the cookies.
  • 1 cup peanut butter (natural, unsweetened) Can substitute with sunflower seed butter for a nut-free version.
  • 1/2 cup rolled oats
  • 1/4 cup honey or maple syrup (optional) For added sweetness.
  • 1/2 teaspoon vanilla extract
  • a pinch salt
Optional Add-ins
  • to taste chocolate chips Add for extra sweetness.
  • to taste chopped nuts For added texture.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the mashed bananas and peanut butter until smooth.
  3. Add the rolled oats, honey or maple syrup (if using), vanilla extract, and a pinch of salt. Stir until fully combined.
  4. Take tablespoon-sized portions of the dough and place them onto the lined baking sheet, ensuring space between each cookie.
Baking
  1. Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  2. Remove from the oven and let cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. For longer storage, freeze the dough portions for fresh cookies anytime.
