Ingredients
  

Pasta and Chicken
  • 8 ounces pasta (penne or spaghetti)
  • 2 pieces chicken breasts (boneless and skinless)
Sauce
  • 3 cloves garlic, minced
  • 1 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper
  • for garnish fresh parsley, chopped

Method
 

Cooking the Pasta
  1. In a large pot, bring water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta water before draining.
Preparing the Chicken
  1. While the pasta is cooking, season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat.
  2. Add the chicken and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and let cool, then slice it into strips.
Sautéing the Garlic
  1. In the same skillet, add minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn it.
Combining Everything
  1. Add the cooked pasta to the skillet with garlic. Start adding in the Parmesan cheese gradually, allowing it to melt into a creamy sauce.
  2. If it’s too thick, slowly add reserved pasta water until desired consistency.
Adding Chicken and Serving
  1. Toss in the chicken strips and mix well. Adjust salt and pepper to taste. Finish with a sprinkle of fresh parsley before serving.

Notes

For a Halal-friendly option, use halal chicken or turkey. Make sure to have all ingredients ready before starting to prevent burning garlic. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months. Reheat with a splash of water to maintain creaminess.
