  • 1 cup shredded cheese (cheddar or a blend)
  • 1/2 cup salsa (mild or spicy depending on your taste)
  • 1/4 cup diced bell pepper (any color)
  • 1/4 cup diced onion (or green onions for a milder flavor)
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: fresh cilantro and diced jalapeƱos for garnish

Preparation
  1. In a mixing bowl or food processor, combine the cottage cheese, salsa, and shredded cheese. Pulse until it reaches your desired level of creaminess.
  2. Stir in the diced bell pepper, onion, cumin, garlic powder, salt, and pepper until thoroughly combined.
  3. Transfer the mixture to a small saucepan and heat over medium-low, stirring occasionally until warm and melty.
  4. Serve hot, garnished with fresh cilantro or diced jalapeƱos if you like it spicy!
  5. Pair with tortilla chips, fresh veggies, or even use it as a topping for your nachos!

Notes

For a creamier dip, blend in a little sour cream or cream cheese. Store leftovers in an airtight container in the fridge for up to 3 days. If freezing, it should last about 2 months. Thaw in the fridge before reheating.
