Blend the Ingredients: In a blender, combine the rolled oats, cottage cheese, eggs, vanilla extract, baking powder, and salt. Blend until the mixture is smooth and well-combined. This should only take about 30 seconds!
Preheat the Pan: Heat a non-stick skillet over medium heat. You may want to add a little oil or cooking spray to prevent sticking.
Pour the Batter: Once the skillet is hot, pour 1/4 cup of the pancake batter for each pancake. Make sure to leave enough space in between each pancake on the skillet.
Cook Until Bubbles Form: Cook for about 2-3 minutes or until you see bubbles forming on the surface of the pancakes.
Flip and Cook: Gently flip the pancakes using a spatula. Cook for another 2-3 minutes until they are golden brown and cooked through.
Serve Warm: Stack the pancakes on a plate and serve them warm with your favorite toppings!
