  • 1/3 cup melted coconut oil Can be replaced with canola or vegetable oil.
  • 1/2 cup honey or maple syrup Choose based on preference.
  • 1 teaspoon vanilla extract
  • 2 large eggs
Dry Ingredients
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup whole wheat flour
  • 1/3 cup cocoa powder
  • 1/2 cup dark chocolate chips Mini chips can be used for better distribution.

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large mixing bowl, mash the ripe bananas with a fork until smooth with a few lumps for texture.
  3. Layer in the melted coconut oil, honey (or maple syrup), and vanilla extract. Mix well until combined.
  4. Whisk in the eggs one at a time until fully incorporated.
  5. In another bowl, mix together the baking soda, salt, whole wheat flour, and cocoa powder.
  6. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix!
  7. Fold in the dark chocolate chips, distributing them evenly throughout the batter.
  8. Pour the batter into your prepared loaf pan and smooth the top with a spatula.
Baking
  1. Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let it cool slightly before transferring it to a wire rack.
