Preparation
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the broccoli florets and sauté for approximately 3-5 minutes until they are bright green and slightly tender.
- In a large bowl, mix the sautéed broccoli, shredded chicken, cauliflower rice, Greek yogurt, garlic powder, onion powder, salt, and pepper. Combine well.
- Place the mixed ingredients into a greased casserole dish or one lined with parchment paper.
- Sprinkle the shredded cheese evenly over the top.
- Cover the casserole dish with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes or until the cheese is melted and bubbling.
- Once cooked, allow the casserole to cool for a few minutes before serving.
Notes
Leftovers can be stored in the refrigerator for up to 3 days. Reheat in the oven or microwave. Can be frozen in an airtight container for 2-3 months.
