  • 2 cups cauliflower rice (fresh or frozen)
  • 1 pound cooked chicken, shredded
  • 1 cup broccoli florets (fresh or frozen)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup Greek yogurt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the broccoli florets and sauté for approximately 3-5 minutes until they are bright green and slightly tender.
  3. In a large bowl, mix the sautéed broccoli, shredded chicken, cauliflower rice, Greek yogurt, garlic powder, onion powder, salt, and pepper. Combine well.
  4. Place the mixed ingredients into a greased casserole dish or one lined with parchment paper.
  5. Sprinkle the shredded cheese evenly over the top.
  6. Cover the casserole dish with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes or until the cheese is melted and bubbling.
  7. Once cooked, allow the casserole to cool for a few minutes before serving.

Notes

Leftovers can be stored in the refrigerator for up to 3 days. Reheat in the oven or microwave. Can be frozen in an airtight container for 2-3 months.
