- In a large mixing bowl, combine shredded cooked chicken, hot sauce, Greek yogurt, diced celery, and blue cheese (if using). Mix well until the chicken is well-coated.
- Rinse the cucumber and slice it into long strips, approximately 1/4 inch thick.
Assembly
- Take a cucumber slice and place about 1-2 tablespoons of the chicken mixture at one end. Roll it up, tucking in the sides as you go.
- Place the rolls on a serving platter and sprinkle with freshly chopped parsley.
Serving
- Serve immediately or chill in the refrigerator for a refreshing treat later.
Notes
These rolls are best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 2 days. Avoid microwaving as this makes them soggy.
