  • 2 cups shredded cooked chicken Ensure the chicken is fully cooked and shredded.
  • 1/2 cup hot sauce (like Frank's RedHot)
  • 1/4 cup Greek yogurt Can be substituted with dairy-free yogurt.
  • 1/4 cup celery, diced
  • 1/4 cup blue cheese, crumbled (optional)
For the Rolls
  • 1 large cucumber Slice into long strips approximately 1/4 inch thick.

Preparation
  1. In a large mixing bowl, combine shredded cooked chicken, hot sauce, Greek yogurt, diced celery, and blue cheese (if using). Mix well until the chicken is well-coated.
  2. Rinse the cucumber and slice it into long strips, approximately 1/4 inch thick.
Assembly
  1. Take a cucumber slice and place about 1-2 tablespoons of the chicken mixture at one end. Roll it up, tucking in the sides as you go.
  2. Place the rolls on a serving platter and sprinkle with freshly chopped parsley.
Serving
  1. Serve immediately or chill in the refrigerator for a refreshing treat later.

Notes

These rolls are best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 2 days. Avoid microwaving as this makes them soggy.
