  • 2 cups broccoli florets Fresh, chopped into bite-sized pieces.
  • 1 cup chopped onion White or yellow onion preferred.
  • 2 cloves garlic, minced For added flavor.
  • 4 cups vegetable broth Use low-sodium if preferred.
  • 2 cups shredded cheddar cheese Preferably Halal-certified.
  • 1 cup milk or cream Use your preference.
  • to taste Salt and pepper Adjust seasoning as desired.
  • 2 tablespoons Olive oil For sautéing the vegetables.

Method
 

Preparation
  1. In a large pot, heat about 2 tablespoons of olive oil over medium heat.
  2. Add the chopped onions and minced garlic and sauté for about 5 minutes, or until the onions are translucent and fragrant.
  3. Toss in your broccoli florets and sauté for another 5 minutes, allowing them to become tender-crisp.
  4. Add the 4 cups of vegetable broth, stir everything together, and bring it to a boil.
  5. Once boiling, reduce the heat and allow the soup to simmer for about 15 minutes, or until the broccoli is tender.
  6. Blend the soup with an immersion blender or in batches using a blender until smooth while maintaining some texture.
  7. Return the blended soup to the pot and stir in the shredded cheddar cheese and milk or cream. Warm through for about 5 minutes.
  8. Season with salt and pepper to taste.
  9. Ladle your soup into bowls, and feel free to add your favorite toppings.

Notes

For a unique twist, substitute the cheddar with other Halal-friendly cheese options such as mozzarella or gouda. Store in an airtight container for 3-5 days in the refrigerator or freeze portions for up to 3 months.
