Preparation
- Toast a slice of whole grain or sprouted bread to your desired crispness.
- In a non-stick skillet over medium heat, crack the egg and let it sizzle until the whites are set but the yolk remains runny, approximately 3-4 minutes. For a vegan option, sauté chickpea flour or tofu until golden.
- If using cheese, place it on top of the egg during the last minute of cooking to let it melt.
- Layer the cooked egg or substitute, fresh spinach or arugula, and avocado slices on the toasted bread. Sprinkle with salt and pepper.
- Top with another slice of toasted bread and gently press to secure the fillings.
- Cut the sandwich in half and enjoy it hot.
Notes
For extra flavor, experiment with different greens or add herbs. Avoid making the sandwich soggy by adding avocado just before serving. Store in the refrigerator for up to three days and reheat in a toaster oven or skillet.
