  • 2 pieces ripe bananas Choose very ripe bananas for maximum sweetness.
  • 1 cup rolled oats Use certified gluten-free oats for a gluten-free option.
  • 1/4 cup peanut butter or almond butter Feel free to use any nut or seed butter.
  • 1/4 cup honey or maple syrup Can adjust sweetness based on preference.
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon Enhances flavor.
  • 1/4 cup chocolate chips Optional for extra indulgence.

Preparation and Baking
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, mash the 2 ripe bananas until completely smooth.
  3. Add the rolled oats, peanut or almond butter, honey or maple syrup, vanilla extract, baking powder, and cinnamon to the bowl. Mix thoroughly.
  4. If you’re adding chocolate chips, fold them in now.
  5. Using a spoon or cookie scoop, drop rounded tablespoons of the dough onto a lined baking sheet, leaving space between each cookie.
  6. Bake for about 12-15 minutes or until the edges are golden brown.
  7. Allow the cookies to cool on a wire rack for a few minutes before enjoying.

Notes

Cookies can last in an airtight container at room temperature for about 3 to 5 days. For longer storage, freeze them for up to 2 months.
