Brownie Batter
  • 2 pieces ripe bananas, mashed Ensure bananas are very ripe with brown spots for optimal sweetness.
  • 1/2 cup unsweetened applesauce
  • 1/4 cup cocoa powder
  • 1/2 cup oat flour Can be made by blending rolled oats in a food processor.
  • 1/4 cup honey or maple syrup Optional sweetener.
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) to ensure your brownies bake evenly.
  2. Line an 8x8 inch baking dish with parchment paper for easy removal.
  3. In a mixing bowl, mash the two ripe bananas until smooth.
  4. Add the unsweetened applesauce, honey (or maple syrup), and vanilla extract to the mashed bananas. Mix until well combined.
  5. In a separate bowl, sift together the oat flour, cocoa powder, baking soda, and salt.
  6. Pour the dry mixture into the wet ingredients gradually, stirring gently until just combined.
  7. Transfer the brownie batter into the prepared baking dish, spreading it evenly.
  8. Place the dish in the preheated oven and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  9. Remove from the oven and let cool in the pan for about 10 minutes. Cut into squares and enjoy!

Notes

For added flavor, feel free to toss in chocolate chips, nuts, or dried fruits. Store in an airtight container in the refrigerator for up to one week, or freeze individually wrapped for up to three months.
