Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the whole wheat flour, brown sugar, baking soda, baking powder, cinnamon, and salt until well combined.
- In another bowl, mix the unsweetened applesauce, vegetable oil, eggs, and vanilla extract. Whisk until the mixture is smooth.
- Slowly add the dry ingredients to the wet ingredients, stirring gently until just combined. Avoid over-mixing to keep the cake light and fluffy.
- If using, fold in the chopped nuts or raisins into the batter.
- Pour the batter into a greased 9-inch square baking dish and spread it evenly.
Baking
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the dish for about 10 minutes before transferring it to a wire rack. Slice and enjoy!
Notes
For gluten-free options, substitute a gluten-free flour mix for the whole wheat flour. For a lower sugar cake, consider using coconut sugar or a suitable sugar substitute. Store the cake in an airtight container in the refrigerator for up to a week, or freeze individual slices for up to three months.
