Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the whole wheat flour, brown sugar, baking soda, baking powder, cinnamon, and salt until well combined.
  3. In another bowl, mix the unsweetened applesauce, vegetable oil, eggs, and vanilla extract. Whisk until the mixture is smooth.
  4. Slowly add the dry ingredients to the wet ingredients, stirring gently until just combined. Avoid over-mixing to keep the cake light and fluffy.
  5. If using, fold in the chopped nuts or raisins into the batter.
  6. Pour the batter into a greased 9-inch square baking dish and spread it evenly.
Baking
  1. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
