Ingredients
  

Cake Mixture
  • 1 box yellow cake mix
  • 3 pieces eggs
  • 1 cup pineapple juice
  • 1/2 cup coconut milk
  • 1/2 cup shredded coconut
  • 1/2 cup chopped macadamia nuts
Chocolate Coating
  • to taste Chocolate or white chocolate for coating
  • optional Sprinkles

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the yellow cake mix, eggs, pineapple juice, and coconut milk. Mix until smooth.
  3. Gently fold in the shredded coconut and chopped macadamia nuts.
Baking
  1. Pour the mixture into a prepared cake pan and bake for about 25-30 minutes or until a toothpick comes out clean.
  2. Allow the cake to cool completely in the pan.
Shaping
  1. Crumble the cooled cake into a large bowl and mold the mixture onto popsicle sticks.
  2. Place the molded cakesicles on a baking tray lined with parchment paper and freeze for at least 1-2 hours.
Coating
  1. Melt your chocolate in the microwave or a double boiler.
  2. Dip each cakesicle into the melted chocolate and tap off excess.
  3. Sprinkle additional toppings while the chocolate is still wet.
  4. Let the coated cakesicles set at room temperature or in the fridge.
Serving
  1. Once set, your Hawaiian Tropical Cakesicles are ready to be enjoyed!

Notes

For gluten-free cakesicles, use gluten-free yellow cake mix. Ensure not to skip the freezing step for better coating adherence.
