Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the yellow cake mix, eggs, pineapple juice, and coconut milk. Mix until smooth.
- Gently fold in the shredded coconut and chopped macadamia nuts.
Baking
- Pour the mixture into a prepared cake pan and bake for about 25-30 minutes or until a toothpick comes out clean.
- Allow the cake to cool completely in the pan.
Shaping
- Crumble the cooled cake into a large bowl and mold the mixture onto popsicle sticks.
- Place the molded cakesicles on a baking tray lined with parchment paper and freeze for at least 1-2 hours.
Coating
- Melt your chocolate in the microwave or a double boiler.
- Dip each cakesicle into the melted chocolate and tap off excess.
- Sprinkle additional toppings while the chocolate is still wet.
- Let the coated cakesicles set at room temperature or in the fridge.
