  • 1 whole pineapple, diced
  • 2 cups strawberries, sliced
  • 2 cups blueberries
  • 2 cups watermelon, diced
  • 1 cup grapes, halved
  • 1 cup coconut flakes
  • 2 tablespoons honey (optional) Add for extra sweetness
  • 1 whole juice of lime For a fresh zing

Method
 

Preparation
  1. Gather all your fresh fruits. Dice the pineapple and watermelon into small, manageable chunks. Hull and slice the strawberries. Halve the grapes, and rinse the blueberries.
  2. In a large mixing bowl, add the diced pineapple, sliced strawberries, blueberries, diced watermelon, and halved grapes.
  3. Gently fold in the coconut flakes to the fruit mixture.
  4. Squeeze the juice of one lime over the fruit salad and toss everything together. If desired, drizzle honey and mix well.
  5. Chill the fruit salad in the refrigerator for about 10 minutes before serving to allow flavors to meld.

Notes

Feel free to substitute fruits based on your preference. For best results, prepare close to serving time and avoid over-mixing to maintain fruit integrity. Store leftovers in an airtight container for up to 2 days.
