Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the eggs, milk, salt, and pepper until combined.
  3. In a greased 9×13 inch baking dish, spread the thawed hash browns evenly across the bottom. If you like, add a layer of diced onions and bell peppers for an extra flavor kick.
  4. Pour the egg mixture over the hash browns.
  5. Sprinkle shredded cheese generously over the top.
  6. Bake in the preheated oven for about 45 minutes or until the eggs are set and the top is lightly golden.
  7. Let it cool slightly before slicing it into squares and serving.
