Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the thawed hash browns with half of the shredded cheese (about ½ cup).
- Lightly grease a 9x13-inch baking dish and spread the hash brown and cheese mixture across the bottom, pressing it gently.
- In another bowl, whisk together the eggs and milk. Season with salt and pepper to taste.
- Add the diced onion and bell pepper to the egg mixture and stir well.
- Pour the egg and vegetable mixture over the hash brown base in the baking dish.
- Sprinkle the remaining ½ cup of cheese on top.
Baking
- Place in the preheated oven and bake for 30-35 minutes, or until the center is set and the top is golden brown.
- Allow the casserole to cool for a few minutes before slicing into squares and serving.
Notes
