Ingredients
  

Casserole Base
  • 2 cups frozen hash browns, thawed
  • 1 cup shredded cheese (cheddar or your choice) Save 1/2 cup for topping
Egg Mixture
  • 6 large eggs
  • 1 cup milk
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • Salt and pepper to taste
Optional Toppings
  • chopped green onions
  • cooked halal chicken sausage

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the thawed hash browns with half of the shredded cheese (about ½ cup).
  3. Lightly grease a 9x13-inch baking dish and spread the hash brown and cheese mixture across the bottom, pressing it gently.
  4. In another bowl, whisk together the eggs and milk. Season with salt and pepper to taste.
  5. Add the diced onion and bell pepper to the egg mixture and stir well.
  6. Pour the egg and vegetable mixture over the hash brown base in the baking dish.
  7. Sprinkle the remaining ½ cup of cheese on top.
Baking
  1. Place in the preheated oven and bake for 30-35 minutes, or until the center is set and the top is golden brown.
  2. Allow the casserole to cool for a few minutes before slicing into squares and serving.

Notes

For substitutions, you can swap out the cheese for a plant-based option or try different veggies such as spinach or mushrooms, ensuring they're halal-friendly. If you're short on time, prepare the casserole ahead of time and refrigerate it overnight.
