Ingredients
  

For the pasta salad
  • 2 cups pasta (ziti or rotini) Feel free to experiment with other fun pasta shapes!
  • 1 cup cherry tomatoes (cut in half) These will be used for eyeballs!
  • 1 cup black olives (pitted and sliced) These will also be used for eyeballs!
  • 1 cup cucumber (diced)
For the dressing
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lemon juice
  • to taste salt and pepper
  • optional food coloring For added eeriness!

Method
 

Preparation
  1. Begin by boiling water in a large pot. Once boiling, add the pasta and cook according to the package directions until al dente. Drain and rinse under cold water to stop the cooking process.
  2. While the pasta is cooking, prepare your vegetables. Slice the cherry tomatoes in half and pit and slice the black olives.
  3. In a mixing bowl, combine the mayonnaise, sour cream, lemon juice, salt, and pepper. Whisk everything together until smooth.
  4. In a large bowl, combine the cooked pasta, cucumbers, cherry tomatoes, and black olives. Pour the dressing over the top and mix until everything is well coated.
  5. For added fun, place a half cherry tomato on top of each pasta piece, followed by a slice of black olive to resemble an eyeball.
  6. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled during your Halloween festivities!

Notes

This dish can be made a day in advance and stored in the fridge. Just add the toppings just before serving for the best presentation. Store in an airtight container in the refrigerator for up to three days. Freezing isn’t recommended.
