Ingredients
  

Main Ingredients
  • 2 pieces ripe bananas, mashed The riper the bananas, the sweeter the cookies!
  • 1 cup rolled oats
  • 1/4 cup nut butter (peanut, almond, or cashew) Great for adding creaminess and flavor.
  • 1/4 cup honey or maple syrup Optional for added sweetness.
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt
Optional Mix-Ins
  • to taste none cinnamon
  • to taste none nuts
  • to taste none dark chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, mash the ripe bananas until smooth.
  3. Add the rolled oats, nut butter, honey (if using), vanilla extract, and salt to the mashed bananas and mix until well combined.
  4. If adding cinnamon or any mix-ins, stir them in at this point.
  5. Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them 2 inches apart, and flatten slightly.
Baking
  1. Bake for about 12-15 minutes, or until the edges turn golden brown.
  2. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For optimal storage, place cookies in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months. Reheat in the microwave or enjoy straight from the freezer.
