Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, mash the ripe bananas until smooth.
- Add the rolled oats, nut butter, honey (if using), vanilla extract, and salt to the mashed bananas and mix until well combined.
- If adding cinnamon or any mix-ins, stir them in at this point.
- Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them 2 inches apart, and flatten slightly.
Baking
- Bake for about 12-15 minutes, or until the edges turn golden brown.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For optimal storage, place cookies in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months. Reheat in the microwave or enjoy straight from the freezer.
