  • 1 pound ground turkey (lean is preferred)
  • 1 medium zucchini, diced
  • 1 cup corn (fresh, frozen, or canned)
  • 1 can black beans, rinsed and drained
  • 2 medium tomatoes, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 tablespoon olive oil for cooking

  1. Dice the onion, zucchini, and tomatoes. Mince the garlic and rinse the black beans if using canned.
Cooking
  1. Heat olive oil in a large skillet over medium heat. Add ground turkey and cook, breaking it up for 5-6 minutes until no longer pink.
  2. Add diced onion and garlic to the skillet and sauté for 2-3 minutes until the onion is translucent.
  3. Add diced zucchini, corn, black beans, tomatoes, cumin, salt, and pepper. Stir well to combine.
  4. Allow to simmer for 5-7 minutes, stirring occasionally, until vegetables soften and flavors meld together.
  5. Serve hot with your favorite toppings.

Notes

Feel free to swap ground turkey for chicken or lean beef. For vegetarian, substitute the meat with quinoa or tofu. Avoid overcooking zucchini to keep its crunch, and ensure turkey is fully cooked for safety.
