Preparation
- Start by chopping your onion, bell pepper, and sweet potato into bite-sized pieces. Rinse and drain the black beans.
Cooking
- In a large skillet over medium heat, add a splash of olive oil. Once hot, add the diced sweet potatoes and cook for about 5-7 minutes, or until they begin to soften, stirring occasionally.
- Add the chopped onion and bell pepper to the skillet, cooking for another 3-4 minutes until the onion becomes translucent.
- Move the vegetables to one side of the skillet and add the ground turkey. Break it apart with a wooden spoon and cook until browned, which should take about 5-6 minutes.
- Stir in the minced garlic, cumin, chili powder, salt, and pepper. Mix everything together before adding the black beans. Allow it all to heat through for another 3-4 minutes.
- Remove from heat and serve hot, garnishing with optional toppings as desired.
Notes
Consider serving it over fluffy rice or quinoa, or alongside a fresh side salad with a zesty vinaigrette.
