Ingredients
  

For the Skillet
  • 1 lb ground turkey
  • 1 large sweet potato, peeled and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 medium onion, chopped
  • 1 any bell pepper, diced any color
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Olive oil for cooking

Method
 

Preparation
  1. Start by chopping your onion, bell pepper, and sweet potato into bite-sized pieces. Rinse and drain the black beans.
Cooking
  1. In a large skillet over medium heat, add a splash of olive oil. Once hot, add the diced sweet potatoes and cook for about 5-7 minutes, or until they begin to soften, stirring occasionally.
  2. Add the chopped onion and bell pepper to the skillet, cooking for another 3-4 minutes until the onion becomes translucent.
  3. Move the vegetables to one side of the skillet and add the ground turkey. Break it apart with a wooden spoon and cook until browned, which should take about 5-6 minutes.
  4. Stir in the minced garlic, cumin, chili powder, salt, and pepper. Mix everything together before adding the black beans. Allow it all to heat through for another 3-4 minutes.
  5. Remove from heat and serve hot, garnishing with optional toppings as desired.

Notes

Consider serving it over fluffy rice or quinoa, or alongside a fresh side salad with a zesty vinaigrette.
