  • 2 medium zucchinis, sliced Choose firm zucchinis for the best texture.
  • 1 piece bell pepper, diced Any color will work.
  • 1 small onion, chopped Yellow or white onion is preferred.
  • 2 cloves garlic, minced Fresh garlic adds great flavor.
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional) Adjust to taste for spice preference.

  • 2 tablespoons olive oil For sautéing.

Preparation
  1. Place a large skillet over medium heat and add the olive oil, allowing it to heat for about 1 minute.
  2. Once the oil is hot, add the chopped onions and minced garlic. Sauté for about 2-3 minutes until the onions are translucent and fragrant.
  3. Increase the heat slightly and add the ground turkey to the skillet. Cook until browned, about 5-7 minutes, stirring occasionally to break it up.
  4. Toss in the sliced zucchini and diced bell pepper, and stir everything together. Cook for another 5 minutes, allowing the veggies to become tender.
  5. Add Italian seasoning, red pepper flakes (if using), salt, and pepper. Stir well to combine and let it cook for another 2-3 minutes, letting the flavors meld.
  6. Remove from heat, garnish with some grated Parmesan cheese if desired, and serve hot.

Notes

For added nutrition, serve with whole grain rice or quinoa and a fresh side salad. Customize the vegetables to your liking, and avoid overcooking the zucchini to maintain its crunch.
