  • 1 pound ground turkey Lean and savory
  • 2 tablespoons vegetable oil Or any preferred cooking oil
  • 1 medium onion, sliced
  • 2 bell peppers sliced Any color
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger Or fresh, minced
  • 2 tablespoons soy sauce Or tamari for gluten-free
  • 1 teaspoon sesame oil Optional
  • Salt and pepper to taste
  • Cooked rice or quinoa for serving Optional

Method
 

Preparation
  1. Slice your onions and bell peppers, and mince the garlic. Having everything ready will ensure that the stir-fry comes together smoothly.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. You’ll know it’s hot enough when you see a slight shimmer.
Cooking
  1. Add the sliced onions first. Sauté until they become translucent, about 2-3 minutes.
  2. Next, add the ground turkey to the pan. Use a spatula to break it apart, and cook for about 5-7 minutes or until it’s no longer pink.
  3. Now it’s time to add the bell peppers. Stir them in and cook for another 3-4 minutes until they are tender but still crisp.
  4. Add in the minced garlic and ginger, mixing everything together. Pour in the soy sauce and sesame oil if using. Stir-fry for another 1-2 minutes until everything is well combined.
  5. Taste and adjust salt and pepper as necessary. Serve your stir-fry warm over rice or quinoa if you desire.

Notes

You can swap out vegetables based on what you have. Broccoli, snap peas, or carrots are excellent additions. Avoid overcrowding the pan while cooking, and store leftovers in an airtight container.
