  • 1 lb ground turkey Lean protein option
  • 1 large onion, chopped
  • 2 pieces bell peppers (any colors), chopped Use a mix of red, green, and yellow
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • to taste salt and pepper Adjust according to preference
  • 1 tbsp olive oil for cooking
  • 1 can diced tomatoes Optional, for added flavor

Method
 

Preparation
  1. Chop the onion and bell peppers, and mince the garlic.
Cooking
  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  2. Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
  3. Once the turkey is browned, add the chopped onion and minced garlic. Sauté for another 2-3 minutes until the onion is translucent.
  4. Add the chopped bell peppers to the skillet and continue to cook for another 5 minutes.
  5. Sprinkle in the Italian seasoning, salt, and pepper. If using diced tomatoes, add them now and stir everything together. Let simmer for an additional 2-3 minutes.
  6. Check for seasoning. Once everything is cooked and blended well, remove from heat and serve warm.

Notes

Consider serving with rice, quinoa, or whole-grain pasta. A side of garlic bread or a refreshing arugula salad with lemon vinaigrette complements the meal well. Store leftovers in an airtight container in the refrigerator for up to 3 days.
