Preparation
- Chop the onion and bell peppers, and mince the garlic.
Cooking
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
- Once the turkey is browned, add the chopped onion and minced garlic. Sauté for another 2-3 minutes until the onion is translucent.
- Add the chopped bell peppers to the skillet and continue to cook for another 5 minutes.
- Sprinkle in the Italian seasoning, salt, and pepper. If using diced tomatoes, add them now and stir everything together. Let simmer for an additional 2-3 minutes.
- Check for seasoning. Once everything is cooked and blended well, remove from heat and serve warm.
Notes
Consider serving with rice, quinoa, or whole-grain pasta. A side of garlic bread or a refreshing arugula salad with lemon vinaigrette complements the meal well. Store leftovers in an airtight container in the refrigerator for up to 3 days.
