  • 1 lb Ground Beef (preferably lean) Can substitute with ground turkey or chicken.
  • 3 cups Fresh Spinach (washed and chopped)
  • 1 cup Feta cheese (crumbled)
  • 1 medium Onion (chopped)
  • 3 cloves Garlic (minced)
  • 2 tablespoons Olive Oil
  • 1 teaspoon Dried Oregano
  • Salt and Pepper (to taste) Adjust based on preference.
Optional Toppings
  • Pomegranate seeds For added crunch.
  • Pine nuts Can be toasted for extra flavor.
  • Chili flakes For a spicy kick.

Preparation
  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onions to the skillet and sauté for about 3-4 minutes, until they become translucent and fragrant.
  3. Increase the heat to medium-high and add the ground beef. Break it apart using a spatula, allowing it to brown evenly for about 5-7 minutes.
  4. Stir in the minced garlic along with dried oregano, salt, and pepper. Cook for an additional 1-2 minutes until the garlic is aromatic.
  5. Add the prepared spinach to the skillet. Stir continuously for about 2-3 minutes until it wilts down.
  6. Remove the skillet from heat, and gently fold in the crumbled feta cheese until well combined.
  7. Plate your delicious creation, and if you like, top with fresh pomegranate seeds or pine nuts for an added crunch and flavor.

Notes

Storing: Leftovers can be stored in an airtight container in the fridge for up to 3 days. For freezing, use a freezer-safe container for up to 2 months. Reheat on low heat, adding a splash of water if needed to keep moist.
