- Heat olive oil in a large skillet over medium heat.
- Add chopped onions to the skillet and sauté for about 3-4 minutes, until they become translucent and fragrant.
- Increase the heat to medium-high and add the ground beef. Break it apart using a spatula, allowing it to brown evenly for about 5-7 minutes.
- Stir in the minced garlic along with dried oregano, salt, and pepper. Cook for an additional 1-2 minutes until the garlic is aromatic.
- Add the prepared spinach to the skillet. Stir continuously for about 2-3 minutes until it wilts down.
- Remove the skillet from heat, and gently fold in the crumbled feta cheese until well combined.
- Plate your delicious creation, and if you like, top with fresh pomegranate seeds or pine nuts for an added crunch and flavor.
Notes
Storing: Leftovers can be stored in an airtight container in the fridge for up to 3 days. For freezing, use a freezer-safe container for up to 2 months. Reheat on low heat, adding a splash of water if needed to keep moist.
