- Peel and dice the sweet potatoes, chop the onion, and dice the bell pepper. Mince the garlic.
Cooking
- In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Season with salt and pepper.
- Stir in the chopped onion, bell pepper, and garlic. Sauté for about 2-3 minutes until the vegetables are slightly softened.
- Add the diced sweet potatoes along with the smoked paprika and cumin. Stir and cover, cooking for about 15 minutes or until sweet potatoes are tender, stirring occasionally.
- Taste and adjust seasoning with more salt and pepper if needed. Remove from heat when well combined.
Serving
- Top with fresh herbs, if desired, and serve hot.
Notes
Feel free to add other vegetables like zucchini or spinach. Experiment with spices for added flavor.
