  1. Peel and dice the sweet potatoes, chop the onion, and dice the bell pepper. Mince the garlic.
Cooking
  1. In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Season with salt and pepper.
  2. Stir in the chopped onion, bell pepper, and garlic. Sauté for about 2-3 minutes until the vegetables are slightly softened.
  3. Add the diced sweet potatoes along with the smoked paprika and cumin. Stir and cover, cooking for about 15 minutes or until sweet potatoes are tender, stirring occasionally.
  4. Taste and adjust seasoning with more salt and pepper if needed. Remove from heat when well combined.
Serving
  1. Top with fresh herbs, if desired, and serve hot.

Notes

Feel free to add other vegetables like zucchini or spinach. Experiment with spices for added flavor.
