Ingredients
  

Pasta and Dressing
  • 8 ounces pasta (e.g., rotini or penne)
  • 1 cup Italian dressing (ensure it’s alcohol-free)
Vegetables
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup black olives, sliced
Cheese and Seasoning
  • 1/2 cup grated Parmesan cheese (use a Halal alternative if needed)

Method
 

Cooking the Pasta
  1. Start by boiling a large pot of salted water. Once boiling, add your pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.
Preparing the Vegetables
  1. While the pasta cooks, chop your tomatoes, cucumber, bell pepper, and red onion. Make sure you slice the olives, too.
Mixing the Salad
  1. In a large mixing bowl, add the cooked pasta, chopped vegetables, and olives.
  2. Pour the Italian dressing over the mixture, and toss until everything is well combined.
  3. Add in the grated Parmesan cheese and mix again. Season with salt and pepper to taste.
Chilling the Salad
  1. For the best flavor, refrigerate the salad for at least 30 minutes before serving to let the flavors meld together.

Notes

For extra protein, consider adding grilled chicken or chickpeas. You can also switch to a homemade vinaigrette for a personalized touch. Store leftovers in an airtight container in the refrigerator for about 3-5 days.
