Ingredients
  

Vegetables
  • 1 medium zucchini, sliced
  • 1 large bell pepper (any color), sliced
  • 1 large red onion, sliced
  • 1 cup mushrooms, sliced
Wrap Components
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 4 large tortillas
  • Your favorite sauce (hummus, ranch, or tzatziki)
  • Fresh greens (like spinach or arugula)

Method
 

Preparation
  1. Wash and slice the zucchini, bell pepper, red onion, and mushrooms into manageable pieces.
Grilling
  1. Preheat your grill or grill pan over medium heat. Toss the sliced veggies in olive oil, salt, and pepper.
  2. Grill them for about 5-7 minutes until they are tender and have nice grill marks.
Assembly
  1. On a large tortilla, spread your favorite sauce across the surface.
  2. Add a handful of fresh greens and top it off with a generous amount of grilled veggies.
  3. Fold in the sides of the tortilla, then roll from the bottom up to create a tight wrap.
Serving
  1. Cut your wraps in half and serve deliciously with more sauce on the side!

Notes

Feel free to mix and match your vegetables based on the season. For extra flavor, marinate your veggies before grilling. Try different sauces for added taste.
