Ingredients

Main Ingredients
  • 1 lb grilled steak (chicken or lamb can also be used as halal-friendly options)
  • 4 pieces corn tortillas
  • 2 cups fresh corn kernels (or you can use frozen corn, thawed)
  • 1/2 cup diced onion
  • 1/2 cup crumbled feta cheese (optional; you can substitute with diced avocado for a dairy-free option)
  • 1/4 cup fresh cilantro, chopped
  • 1 piece lime, juiced
  • Salt and pepper to taste

Method

Preparation
  1. Start by marinating your choice of steak for at least an hour (olive oil, garlic, and your favorite spices work beautifully).
  2. Preheat your grill over medium-high heat. Grill the steak for about 4-5 minutes per side, or until cooked to your liking.
  3. Remove and let it rest for 5 minutes before slicing it thinly against the grain.
  4. If you’re using fresh corn, grill it lightly on the cob for that smoky flavor or sauté the kernels in a pan with a little olive oil for about 3-5 minutes until softened and slightly caramelized.
  5. Warm your corn tortillas in a heated skillet for about 30 seconds on each side to make them pliable.
Assembly
  1. Start layering: add the sliced steak, followed by sautéed corn, diced onions, cilantro, and crumbled feta cheese (or avocado).
  2. Squeeze fresh lime juice over the top and season with salt and pepper.
Serving
  1. Present your beautiful tacos on a platter and enjoy!

Notes

If you’re looking for variety, use chicken, lamb, or grilled vegetables for a vegetarian option. Store any unassembled ingredients in airtight containers in the refrigerator for up to three days. Grilled steak can be frozen for up to a month; reheat on the stove or in the oven to lock in moisture.
