Preparation
- Start with 1 pound of shrimp, making sure they are peeled and deveined.
- In a bowl, combine 2 tablespoons of olive oil, 1 tablespoon minced garlic, 1 tablespoon lemon juice, and a good pinch of salt and pepper. Mix until well combined.
- Add the shrimp to the marinade and toss until they are fully coated. Let them marinate for about 15 minutes.
- If using wooden skewers, soak them in water for about 30 minutes prior to grilling. Then, thread the shrimp onto the skewers, leaving a little space between each.
Grilling
- Preheat your grill to medium-high heat.
- Once hot, place the shrimp skewers on the grill, cooking for about 2-3 minutes on each side, or until they turn opaque and have lovely grill marks.
- Remove from the grill and let cool for a moment. You can sprinkle some fresh herbs on top if desired, then plate and enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for up to 2 days. To freeze, wrap tightly in plastic wrap and aluminum foil, maintaining quality for about a month. Reheat in the oven at a low temperature to preserve flavor and texture.
