Ingredients
  

Seafood and Marinade
  • 1 lb shrimp, peeled and deveined Use fresh shrimp for the best flavor.
  • 1 lb scallops, rinsed and patted dry Ensure scallops are fresh.
  • 1 lb fish fillets (like cod or tilapia), cut into chunks Cut into uniform pieces for even cooking.
  • 4 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons lemon juice Fresh lemon juice is recommended.
  • to taste Salt and pepper Season to personal preference.
Vegetables
  • 1 bell pepper, diced (any color works!) Adds color and crunch.
  • 1 medium zucchini, sliced Sliced into rounds.

Method
 

Preparation
  1. In a large bowl, whisk together the olive oil, minced garlic, lemon juice, salt, and pepper to create the marinade.
  2. Add the shrimp, scallops, and fish chunks to the marinade, ensuring each piece is well-coated. Allow it to marinate for about 15 minutes.
  3. While the seafood marinates, preheat your grill to medium-high heat.
  4. Thread the marinated seafood onto skewers, alternating with pieces of bell pepper and slices of zucchini.
Cooking
  1. Place the skewers on the preheated grill. Grill for about 2-3 minutes on each side, or until the seafood is opaque and cooked through.
  2. Once grilled, remove the skewers and serve them hot, adding a little extra lemon juice for brightness.

Notes

For additional flavor, consider adding spices or fresh herbs. Store leftovers in an airtight container for up to 2 days. Reheat in the oven at 300°F for about 10 minutes.
