Ingredients
  

Seafood Ingredients
  • 1 pound shrimp, peeled and deveined
  • 1 pound scallops
  • 1 pound squid, cleaned and cut into rings
Vegetables
  • 1 bell pepper, cut into squares
  • 1 zucchini, sliced into rounds
Marinade
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon juice of 1 lemon
  • Salt, to taste
  • Black pepper, to taste

Method
 

Preparation
  1. Start by rinsing your shrimp, scallops, and squid under cold water and pat them dry with paper towels.
Marinating the Seafood
  1. In a large bowl, combine the olive oil, minced garlic, lemon juice, salt, and black pepper. Mix well, then add the shrimp, scallops, and squid, coating them thoroughly in the marinade. Let them marinate for about 15-20 minutes for maximum flavor.
Assembling the Skewers
  1. Take your skewers and alternate threading the marinated seafood with pieces of bell pepper and zucchini. Make sure to leave a little space in between for even cooking.
Grilling
  1. Preheat your grill to medium-high heat. If you’re using wooden skewers, soak them in water for at least 30 minutes beforehand to prevent burning. Place the skewers on the grill and cook for 3-4 minutes on each side or until the seafood is cooked through and has beautiful grill marks.
Serving
  1. Once done, carefully remove the skewers from the grill. Serve them with an extra drizzle of lemon juice, a sprinkle of fresh herbs, or a side of your choice!

Notes

For a Halal-friendly version, feel free to swap out seafood for your favorite fish varieties like salmon or tilapia. Pay attention to cooking time, as seafood cooks quickly and can become chewy if overcooked. Avoid overcrowding the skewers.
