Ingredients
  

For the marinade
  • 1/4 cup olive oil
  • 2 pieces lemons (juice and zest)
  • 3 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • to taste salt and pepper
For the main dish
  • 4 pieces boneless, skinless chicken breasts

Method
 

Preparation
  1. In a large bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper.
  2. Add the chicken breasts to the marinade, cover, and let them marinate in the refrigerator for at least 30 minutes (or for up to 4 hours for more flavor).
Grilling
  1. Preheat your grill to medium-high heat. Make sure the grates are clean and lightly oiled to prevent sticking.
  2. Remove the chicken from the marinade, letting any excess drip off. Place the chicken on the grill and cook for about 6-7 minutes on each side or until the chicken is fully cooked (internal temperature of 165°F).
Serving
  1. Remove the chicken from the grill and let it rest for a few minutes. Slice and garnish with fresh parsley if desired. Serve with your favorite sides.

Notes

For maximum flavor, allow the chicken to marinate longer. Avoid overcooking to prevent dry chicken. Use fresh herbs if available for a more vibrant flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days.
