  • 4 ears ears of fresh corn on the cob (husked and cleaned)
  • 4 tablespoons unsalted butter (melted, plus more for serving)
  • Salt to taste
  • Black pepper to taste
  • Optional toppings: Grated cheese (like cotija), chili powder, lime wedges, or fresh herbs (like cilantro) Choose according to preference

Preparation
  1. Husk the corn, removing all the silk and break off any excess stem to create a clean edge for grilling.
  2. Heat your grill to medium-high heat. If using a charcoal grill, let the coals burn down until they’re glowing and covered with ash.
  3. Brush the corn with melted butter and sprinkle salt and pepper over each ear generously.
Grilling
  1. Place the corn on the grill and cook, turning occasionally, for about 10-15 minutes or until you see little char marks and the kernels turn tender.
Serving
  1. Remove from the grill, let it cool slightly, then serve with additional melted butter and a sprinkle of your favorite toppings.

Notes

For a healthier option, you can use olive oil instead of butter. Keep an eye on the corn while grilling to prevent burning. Store leftovers in the refrigerator for up to 3 days or in the freezer for up to 6 months.
