Ingredients
  

For the Chicken Skewers
  • 1 pound Chicken breast, cut into 1-inch cubes
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 3 cloves Garlic, minced
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • 1 teaspoon Salt, adjust to taste
  • 1/2 teaspoon Black pepper
  • 1 large Bell peppers, cut into 1-inch pieces Any color
  • 1 medium Red onion, cut into 1-inch pieces
  • 4-6 pieces Skewers, soaked in water if wooden Soak for 30 minutes

Preparation
  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, paprika, cumin, salt, and black pepper. Add the cubed chicken breast, and coat well. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for enhanced flavor.
  2. While the chicken is marinating, cut bell peppers and red onion into 1-inch pieces. These will add color and flavor to your skewers.
  3. Once marinated, thread the chicken, bell peppers, and red onion onto the skewers, alternating between chicken and vegetables for a colorful presentation.
  4. Preheat your grill to medium-high heat (about 375°F – 450°F).
Grilling
  1. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, or until the chicken is cooked through and has nice grill marks. Use a meat thermometer to ensure the internal temperature reaches 165°F.
  2. Once grilled to perfection, remove from the grill and let them rest for a few minutes. Serve hot with your favorite dipping sauce and enjoy!

Notes

For best results, allow chicken to marinate longer. You can mix in favorite vegetables like zucchini or cherry tomatoes. Ensure your grill is preheated to avoid sticking, and experiment with spices or yogurt in the marinade. Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 3 months. Reheat in the oven at 350°F to maintain juiciness.
