Preparation
  1. Preheat your grill.
  2. Season the chicken breasts with salt, pepper, and a drizzle of olive oil.
Grilling
  1. Place the chicken breasts on the hot grill, cooking for about 6-7 minutes on each side until fully cooked (internal temperature should reach 165°F).
Assembly
  1. Lay the grilled chicken on a serving plate and top each breast with slices of fresh mozzarella and tomatoes.
  2. Sprinkle freshly torn basil leaves over the chicken and drizzle balsamic glaze on top.

Notes

For a vegetarian option, use grilled eggplant. Let the chicken rest for a few minutes after grilling to lock in the juiciness. Store leftovers in an airtight container for up to three days.
