Ingredients
  

For the Grilled Chicken
  • 2 pieces boneless, skinless chicken breasts
  • 3 tablespoons olive oil Divided into 2 tablespoons for marination and 1 tablespoon for sauce
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
For the Broccoli
  • 2 cups broccoli florets
For the Creamy Garlic Sauce
  • ½ cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon lemon juice
  • Fresh parsley, chopped (for garnishing)

Method
 

Preparation
  1. Preheat the grill or grill pan to medium-high heat.
  2. In a bowl, combine 2 tablespoons of olive oil, garlic powder, salt, and pepper. Add the chicken breasts and coat well. Let it marinate for about 10 minutes.
Cooking
  1. Place the marinated chicken on the grill and cook for about 6-7 minutes on each side, or until fully cooked through. Use a meat thermometer to ensure it reaches 165°F (75°C).
  2. While the chicken is grilling, steam or blanch the broccoli florets in salted water for 3-4 minutes until they’re vibrant in color and tender but still crisp. Drain and set aside.
  3. In a small saucepan, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant (about 1 minute). Pour in the heavy cream and lemon juice, then stir continuously for 2-3 minutes until slightly thickened. Season with salt and pepper to taste.
Assembly
  1. Slice the grilled chicken and arrange it over the steamed broccoli. Drizzle the creamy garlic sauce on top and garnish with fresh parsley.
  2. Serve immediately and enjoy your gloriously healthy grilled chicken bowl!

Notes

For added flavor, marinate the chicken longer ahead of time. Keep an eye on the broccoli to avoid overcooking; it should be bright green and tender-crisp. You can store leftovers in an airtight container in the refrigerator for up to three days or freeze them for up to a month.
