Preparation
- Preheat the grill or grill pan to medium-high heat.
- In a bowl, combine 2 tablespoons of olive oil, garlic powder, salt, and pepper. Add the chicken breasts and coat well. Let it marinate for about 10 minutes.
Cooking
- Place the marinated chicken on the grill and cook for about 6-7 minutes on each side, or until fully cooked through. Use a meat thermometer to ensure it reaches 165°F (75°C).
- While the chicken is grilling, steam or blanch the broccoli florets in salted water for 3-4 minutes until they’re vibrant in color and tender but still crisp. Drain and set aside.
- In a small saucepan, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant (about 1 minute). Pour in the heavy cream and lemon juice, then stir continuously for 2-3 minutes until slightly thickened. Season with salt and pepper to taste.
Assembly
- Slice the grilled chicken and arrange it over the steamed broccoli. Drizzle the creamy garlic sauce on top and garnish with fresh parsley.
- Serve immediately and enjoy your gloriously healthy grilled chicken bowl!
Notes
For added flavor, marinate the chicken longer ahead of time. Keep an eye on the broccoli to avoid overcooking; it should be bright green and tender-crisp. You can store leftovers in an airtight container in the refrigerator for up to three days or freeze them for up to a month.
