Ingredients
  

For the Chicken Bites
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized chunks
  • 2 tablespoons olive oil
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
For the Creamy Garlic Sauce
  • 1 cup Greek yogurt (or sour cream)
  • 3 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Fresh parsley, chopped (for garnish)

Preparation
  1. In a large bowl, combine the olive oil, paprika, garlic powder, salt, and pepper. Add the chicken pieces to the marinade and toss until well coated. Let it marinate for at least 15 minutes; the longer, the better!
  2. While the chicken is marinating, mix the Greek yogurt (or sour cream), minced garlic, and lemon juice in another bowl. Stir until smooth and set aside.
Cooking
  1. Heat your grill to medium-high heat. If you’re grilling indoors, preheat a grill pan or skillet.
  2. Once the grill is heated, add the marinated chicken bites. Grill for about 8-10 minutes, turning occasionally to ensure they’re cooked evenly. They should reach an internal temperature of 165°F (75°C).
  3. Once cooked, remove the chicken from the grill and let it rest for a couple of minutes. Serve it up on a platter with the creamy garlic sauce drizzled on top or on the side for dipping.

Notes

For serving, consider pairing these chicken bites with a fresh garden salad, roasted vegetables, or fluffy rice. You can also add herbs, spices, or grated parmesan cheese for additional flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days.
