Ingredients
  

Main Ingredients
  • 2 slices slices of bread (your choice: sourdough, whole grain, etc.) Choose your preferred type of bread.
  • 4 ounces gouda cheese, shredded Gouda cheese for the best melting quality.
  • 1 cup mushrooms, sliced (cremini or button) Fresh mushrooms work best.
  • 1 small onion, thinly sliced Sweet or yellow onions will caramelize nicely.
  • 2 tablespoons butter For grilling the sandwich.
  • to taste Salt and pepper For seasoning.
  • Olive oil For roasting mushrooms.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. On a baking sheet, toss the sliced mushrooms and onions with a drizzle of olive oil, salt, and pepper. Spread them out in a single layer and roast for about 15-20 minutes or until they are golden brown and tender.
  3. While the veggies are roasting, spread butter on one side of each slice of bread.
Assembling the Sandwich
  1. On the non-buttered side of one slice of bread, layer the gouda cheese, followed by the roasted mushrooms and onions. Top with another slice of gouda and finish with the second slice of bread, buttered side up.
Grilling
  1. In a skillet over medium heat, place the sandwich and cook until the bread is golden brown and the cheese begins to melt, about 3-4 minutes on each side.
Serving
  1. Remove the sandwich from heat and let it sit for a minute. Slice in half and serve warm.

Notes

For variations, use cheddar or mozzarella if gouda isn't available, or substitute mushrooms with sautéed spinach or bell peppers. Store leftovers in an airtight container in the refrigerator for up to 2 days.
