Ingredients
  

For the Marinade
  • ¼ cup soy sauce
  • ¼ cup honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • to taste Salt and pepper
Main Ingredients
  • 4 boneless, skinless chicken breasts
  • 1 ripe pineapple, peeled, cored, and cut into rings
  • Fresh cilantro for garnish (optional) Adds freshness and color

Method
 

Preparation
  1. In a bowl, whisk together the soy sauce, honey, olive oil, minced garlic, ground ginger, salt, and pepper.
  2. Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and gently massage the marinade into the chicken.
  3. Allow it to marinate in the refrigerator for at least 30 minutes (or up to 4 hours for deeper flavor).
Grilling
  1. Preheat your grill to medium-high heat, about 375°F (190°C).
  2. Remove the chicken from the marinade and place it on the grill. Grill for about 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.
  3. While the chicken is grilling, place the pineapple rings on the grill, cooking for about 2-3 minutes on each side, until they’re caramelized.
Serving
  1. Arrange the grilled chicken on a platter, top with pineapple rings, and garnish with freshly chopped cilantro.
  2. Enjoy your tropical feast!

Notes

Marinate chicken for several hours or overnight for enhanced flavor. Pair with coconut rice or a salad for a complete meal.
