Preparation
- In a bowl, whisk together the soy sauce, honey, olive oil, minced garlic, ground ginger, salt, and pepper.
- Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and gently massage the marinade into the chicken.
- Allow it to marinate in the refrigerator for at least 30 minutes (or up to 4 hours for deeper flavor).
Grilling
- Preheat your grill to medium-high heat, about 375°F (190°C).
- Remove the chicken from the marinade and place it on the grill. Grill for about 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.
- While the chicken is grilling, place the pineapple rings on the grill, cooking for about 2-3 minutes on each side, until they’re caramelized.
Serving
- Arrange the grilled chicken on a platter, top with pineapple rings, and garnish with freshly chopped cilantro.
