- Start by carefully slicing open the Aji Amarillo peppers (or jalapeños). Remove the seeds if you want to tone down the heat.
- In a blender or food processor, combine the cilantro, diced peppers, mayonnaise, sour cream, minced garlic, lime juice, and a pinch of salt.
- Blend the mixture until it reaches a smooth, creamy consistency. Don’t forget to taste for seasoning; adjust if necessary!
- For the best flavor, allow the sauce to chill in the refrigerator for at least 30 minutes before serving.
Notes
This sauce keeps well in the fridge for about a week. Can also be frozen for about two months. Avoid blending too long to prevent it from becoming runny. Substitute Aji Amarillo peppers with jalapeños if needed.
