  • 2-3 Aji Amarillo peppers (or jalapeños for a milder sauce) Remove seeds to reduce heat.
  • 1 cup fresh cilantro, chopped Use fresh for the best flavor.
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1-2 garlic cloves, minced
  • 1 tablespoon lime juice
  • Salt to taste

Method
 

Preparation
  1. Start by carefully slicing open the Aji Amarillo peppers (or jalapeños). Remove the seeds if you want to tone down the heat.
  2. In a blender or food processor, combine the cilantro, diced peppers, mayonnaise, sour cream, minced garlic, lime juice, and a pinch of salt.
  3. Blend the mixture until it reaches a smooth, creamy consistency. Don’t forget to taste for seasoning; adjust if necessary!
  4. For the best flavor, allow the sauce to chill in the refrigerator for at least 30 minutes before serving.

Notes

This sauce keeps well in the fridge for about a week. Can also be frozen for about two months. Avoid blending too long to prevent it from becoming runny. Substitute Aji Amarillo peppers with jalapeños if needed.
