Preparation
  1. Begin by pitting and draining your olives if they aren’t already prepared. Crumble the feta cheese and gather your other ingredients.
Combining Ingredients
  1. In a food processor, combine the green olives, feta cheese, lemon juice, garlic, olive oil, and optional fresh herbs.
Blending
  1. Pulse the mixture until it reaches your desired level of smoothness. For a chunkier dip, blend it less. If you prefer a creamier texture, blend it until smooth.
Seasoning
  1. Give the dip a taste and season with salt and pepper as needed, adjusting for the saltiness of olives and feta.
Serving
  1. Transfer the dip to a serving bowl and enjoy with your favorite dippers!

Notes

This dip is particularly tasty the next day. Store in an airtight container in the fridge for 3-5 days. Best served at room temperature.
